Red Pepper Fettuccine For Two
8 ounces dry fettuccine pasta
1 red bell pepper, julienned
2 cloves garlic, minced (less if you don't love garlic like i do)
1/2 teaspoon chili powder (more to spice it up a bit)
1/2 cup reduced fat sour cream
1/3 cup chicken broth
1/3 cup grated parmesan
salt and pepper

bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes; drain.
spray cooking oil in a large skillet and saute red bell peppers, garlic and chili powder over medium heat for 3 to 5 minutes.
stir in sour cream and broth; simmer uncovered for 5 minutes.
remove from heat and stir in cheese.
toss hot pasta with sauce and season with plenty of salt and pepper
