cheeseburger pie

ga.izzie // kitchen princess
1 lb of ground meat
1 egg
1 package of onion soup mix
1/4 cup of parsley
1/2 cup of bread crumbs
2 tsp Worcestershire sauce
salt and pepper to taste
4 servings of instant mashed potatoes (as directed on the box)
4 oz - 8-oz Shredded Cheddar cheese (depending on how "cheesy" you are)

Preheat oven to 350 degrees
Combine the first seven ingredients in a large bowl
spread into a 9" or larger pie pate.
Bake in preheated oven for 20-30 minutes or until somewhat browned on the top.

prepare the instant mashed potatoes as directed on the box using a little bit more potato flakes to make it like the consistency of thick mashed potatoes.

after the ground meat is cooked, take it out of the oven and carefully put the prepared mashed potatoes on top as well as the shredded cheese

to prevent a mess in your oven, place the hamburger pie on a cookie sheet and put it back in the oven long enough to melt the cheese.

peanut butter pie

4oz cream cheese
3/4 cup powdered sugar
1/2 cup peanut butter
1/2 milk
8oz cool whip
2 reese cups
graham cracker crust or oreo crust

beat cream cheese, milk, and powdered sugar.
add peanut butter. beat until completely mixed.
fold in cool whip
pour into pie crust
crumble reese cups and add to top of pie
freeze until firm

crockpot beef tips

1/2 cup flour
1 pound of beef tips
1 cup of beef broth
1 tsp worshetershire sauce
2 tsp ketchup
salt/pepper/garlic powder to taste

mix all ingredients
cook on low 6-8 hours or high 3-5 hours

if you want the gravy thicker, add 1/4 cup water and 3tbsp of flour an hour before you get ready to eat.

serve topped with shredded montery jack cheese over rice. you can also add onions and/or mushrooms to the crockpot mixture.

also, i like to watch the liquid level on mine, so i tend to add water when i feel it's getting low. i add no more than 1/4 cup per hour and a half if cooked on high.

My event coordinator mentioned the other day about wanting some puppy chow, so i made her some for valentine's day:

3/4 cup peanut butter
1 cup chocolate chips
1/4 cup butter
8 cups chex (i used 4 rice and 4 corn)
2 cups powdered sugar

Melt peanut butter, chocolate chips, and butter together.
Pour over the cereal in a large bowl and stir well.
Pour the powdered sugar in a large bag.
Add cereal/chocolate mix and shake to coat.

Easy Peanut Butter Fudge
1/4 cup butter
1/4 cup milk
1 1/8 cup brown sugar
3/8 cup peanut butter
1/2 teaspoon vanilla extract
1 3/4 cup confectioners' sugar

melt butter in saucepan
stir in brown sugar and milk
boil for two minutes
remove from heat
stir in peanut butter and vanilla
pour over confectioners' sugar
beat until smooth
pour in 8x8 pan
chill until firm
cut into squares

Chicken and Dumplings
6 cups fat free chicken broth
1 large can of chicken breast
1 can fat free cream of chicken soup
3/4 cup water

cut tortillas into dumpling size pieces
bring broth, chicken, and water to a boil
drop in tortilla pieces one at a time
boil until tender (about 5-6 minutes)
add soup, salt, and pepper
continue boiling for two miutes, stiring frequently

Garlic Cheese Grits
1 cup grits
1/2 teaspoon salt
1 roll of garlic cheese
1 stick butter
2 eggs, beaten
1 cup shredded cheese

combine grits, salt, and 4 cups of water in a saucepan.
bring to a boil, reduce heat, and simmer until grits are done.
add and melt garlic cheese and butter.
add beaten aggs. mix well.
pour into casserole dish
sprinkle with shredded cheese
back at 350 for 45 minutes

Chicken Quesadillas
1 can white chicken meant, drained
1 cup chunky salsa
1 cup shredded cheese
1 package tortillas

combine chicken and salsa in a saucepan. bring to a boil, reduce heat, and simmer for 5 minutes.
remove from heat, stir in cheese, and cool slightly.
fill half of tortilla with chicken/cheese mixture
heat a pat of butter in a pan on stove
fry quesadilla on both sides until golden brown

Spicy Blue Cheese Meatloaf
1 pound ground sirloin
1/2 cup crumbled blue cheese
2 tablespoons crumbled blue cheese for topping
1/2 cup minced onion
1/3 cup hot sauce
1 tablespoon worcestershire sauce
1 teaspoon ground black pepper
1 teaspoon prepared yellow mustard
seasoned breadcrumbs

saute onion in olive oil
in medium bowl, mix together the ground sirloin, blue cheese, cooked onion.
stir in worcestershire sauce, mustard, and pepper
add breadcrumbs as needed for desired consistancy
pat down into loaf pan
cook on 350 for 30 minutes.
check for desired doneness every ten minutes after the first 30. i use a toothpick, like you would a cake.
top with remaining crumbled blue cheese
